You can call him crazy, but “The Crazy Baker,” Hall Hitzig, owns the award-winning business that is anything but crazy.
Hitzig offers a “luscious experience” via pastries, natural granolas, tortes, panfortes, sticky puddings and brownies perfected after years of training, blended with continual experimentation and constant tasting.
“I was treated to the very best European bakeries as a child by my mother,” he said.
Hall learned to bake to please his family’s sweet tooth.
“I was formally trained at the L’Academie de Cuisine in Gaithersburg, Md.,” he said.
Hall worked at prestigious hotels and restaurants in the U.S. and abroad before putting down roots in rural Greenbrier County.
The Crazy Baker will offer samples and sell products at the West Virginia Chamber of Commerce’s 72nd Annual Meeting and Business Summit that begins Wednesday and runs through Friday at The Greenbrier.
“We are looking forward to it,” Hitzig said.
In business since 2002, his wife, Amy, handles the business side of “The Crazy Baker,” while Jeff Kessler of Jeff’s Breads shares their space and their passion for baking.

Also scheduled to appear at the state chamber’s annual event Wed-nesday is DeFluri’s Cho-colates of Martinsburg.
According to DeFluri’s owner Brenda Casabona, its new product line, Dr. DeFluri’s Behavior Modification Tablets, may not be a cure for what ails you, but they’re guaranteed to adjust bad attitudes.
Not tested on plants, trees or domesticated animals, “Dr. D’s Behavior Modification Tablets” went a long way in the human testing laboratory she calls home.
“Everyone had positive comments, smiles, and lots of suggestions about additions to the label,” Casabona said.
Casabona said her new product line’s humorous labeling is tongue-in-cheek, but dark chocolate has been proven “heal-thy.”
“There have been several studies pointing out that specific kinds of chocolate are healthy supplements in everyone’s diet,” said Casa-bona. “But I make no claims about improving health. Our tablets are aimed at your attitude.”
