Missy Burleson, of Missy’s Cake Shop, had made cakes by order for four years before a gluten allergy caused her health to take a turn for the worse. Since, she’s lost 75 pounds and will run her first full-length marathon on St. Patrick’s Day in Virginia Beach, Va. She chose to share one of her gluten-free favorites here, which may end up in cupcake form the day of competition. “I made this cake for my husband’s birthday and it was delicious,” she said.
