Chef Michele Stalnaker, a consultant for Pasquale’s Restaurant and The Char, enjoys combining the flavors that come together in unique ways in Caribbean cooking. She recently prepared a variety of these dishes for a March of Dimes Signature Chefs Auction. Chicken is a favorite meat choice for Caribbean recipes, photo below. However, pork and goat are frequently used as the entree.
